White Cake & White Frosting

Taken from Better Homes and Garden Cookbook.

White Cake

2 1/2 c allpurpose flour
2 c sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/3 c buttermilk or sour milk
1/2 cup shortening, margarine, or butter
1 teaspoon vanilla
4 egg whites

In a bowl combine flour, sugar, baking powder, baking soda, and 1/8 teaspoon salt. Add buttermilk, shortening, and vanilla. Beat with an electiric mixer on low speed for 30 seconds scraping bowl. Beat on med to high speed for 2 minutes, scraping bowl occasionally. Add egg whites and beat for 2 minutes more scraping bowl.

Pour into 2 greased and floured 9 X 1 1/2 inch round baking pans. Bake in a 350 oven for 30 to 35 minutes or till a toothpick inserted near the center comes out clean. Col on wire racks for 10 minutes. Loosen sides. Remove from pans. Cool thoroughly on wire rack, Serves 12

Here are 2 frostings that go good with this cake

Creamy White Frosting

1 c shortening
1 1/2 teaspoons vanill
1/2 teaspon lemon extract, orange or almond extract
4 1/2 c sifted powdered sugar
3 to 4 tablespoons milk

Beat shortening, vanilla, and extract with an electric mixer on med speed for 30 seconds. Slowly add half of the powdered sugar, beating well. Add 2 tablespoons milk. Gradually beat in remaining powdered sugar and enough remaining milk to make of spreading consistency. Frosts tops and sides of two 8 or 9 inch cake layers.
