.5 pound (2 sticks) butter, softened
1.5 cups all-purpose flour
1 cup firmly packed brown sugar
.5 cup granulated sugar (confectioner's sugar recommended)
1 teaspoon baking soda
1 teaspoon cinnamon
.5 teaspoon salt (optional, but recommended)
3 cups uncooked oats (old fashioned steel cut recommended)
2 eggs
1 teaspoon vanilla (pure recommended)
1 cup raisins (optional)
1. Heat oven to 350 degrees Farenheit
2. Beat together butter and sugars until creamy (in a mixer w/whisk attachment recommended)
3. Add eggs and vanilla; beat well
4. Add combined flour, baking soda, cinnamon and salt; mix well
5. Stir in oats and raisins; mix well
6. Drop by rounded scoopfuls onto ungreased cookie sheet (silpat recommended)
7. Bake 10 to 12 minutes on cookie sheet; remove to wire rack
Yields about four dozen (recommend a small scoop of vanilla ice cream between two of these cookies fresh after cooling)
Bar Cookies: Bake 30-25 minutes in ungreased 13 x 9-inch metal baking pan
