Bodacious Banana Bread

Ingredients
1/2 c. butter
1/2 c. baker's sugar
1/2 c. brown sugar
2 lg. eggs
3 lg. ripe bananas
2 c. flour
1/2 tsp. baking powder
1/2 heaping tsp. baking soda
1/2 tsp. salt (optional)
1/2 c. chopped nuts (optional)
1 pinch cinnamon (optional)
1 splash pure vanilla extract (optional)

Directions
Cream together butter, sugar, and eggs. Add ripe bananas. Add flour, baking powder, baking soda, salt (optional), and nuts. This makes 1 large loaf. Double recipe makes 3 small loaves. Grease bread pan, then pour batter in evenly.

Bake at 350°F for 45-60 minutes until done.

Variation via my friend Jason's grandmother's recipe: 4 eggs, 1 c shortening, 2 c sugar, 4 c flour, 2 tsp soda, 1 tsp salt 5 large ROTTEN bananas. That's the key here mister, the blacker the better. I have made the same recipe with less ripe bananas and the flavor isn't as strong. Bake at 350 for a good 40 min or until done in the center. This recipe is supposed to be for two loaves but I make 3 with it. Seems like it's really hard to cook all the way through in two loaf pans, end up overcooking the sides/top to get the center done!
